To stick to the KISS principle, I'd suggest storing simple CSV files in a folder, and truncate them so that only the last n days are stored.

Wouldn't it be easier in developement to use a sqlite (or equivalent) databse? They can be queried more easily and also create only a single file.

Sure, but CSV is way easier to process externally, and doesn't break as easily. For the graphing, all we need is "the last 50 lines from the file" anyways.
